Whole Wheat Pasta Dough Recipe

 

This whole wheat pasta dough recipe makes a wonderfully flavorful alternative to white flour pasta. Here the proportion of whole wheat flour is somewhat less than half so it’s still a light, fresh pasta recipe. What I’m focusing on here is an easy homemade pasta method that you can also use to make white or semolina flour pasta dough. Nutrition-wise though, the whole wheat flour has fewer carbs and calories and more protein, fiber and minerals than pasta made from all white flour. Whole wheat, a complex carbohydrate, is also digested more slowly and doesn’t spike blood sugar and insulin levels the way refined white flour does. Either way, making this easy homemade pasta is faster and less work than you might think.

It’s easy to make pasta without a machine. You won’t need a mixing machine and you won’t need a pasta rolling and cutting machine either, if you don’t have one. I show how to make the pasta with a rolling pin too.

Using the dome makes the job very efficient and easy. The dome is perfectly shaped for working the pasta dough in a bowl very quickly. So, instead of chasing flour with egg-coated hands on a counter or board, you can stir and knead the pasta dough with the dome in a very tidy, less wasteful way. Using a mixing machine to blend pasta can strain the motor since it needs to be such a heavy dough.

This dough can be rolled out and cut in a pasta rolling machine or with a rolling pin on a counter top.  If you don’t want to use a knife on your counter’s surface, I show how to cut the pasta strips on your rolling pin.

How to Make Pasta by hand with the Dome kitchen tool

Ingredients

  • 1 large whole egg
  • 1/8 cup water 1.2 oz
  • ½ cup whole wheat flour 2.5 oz
  • ¾ cup all purpose flour 3.2 oz

Instructions

  • Add the egg and water to a mixing bowl. Stir well.
  • Add the whole wheat flour and white flour to the bowl. They don’t have to be premixed.
  • Stir with the dome until the mixture is thoroughly moistened.
  • When it becomes more dough-like, knead the dough with the dome until you can form it into a ball.
  • Rest the dough for 10 minutes
  • If you have a pasta rolling machine, cut the dough into 6 pieces and process it through the machine.
  • Allow the cut pasta to dry on a rack or arrange it loosely in small separate piles.
  • To roll out with a rolling pin, cut the dough into 3 pieces.
  • Roll the dough with a rolling pin on a hard surface as thin as you can. Cut it into strips.
  • If your work surface can’t be cut against with a knife. Allow the dough to wrap around your rolling pin and cut strips directly on the rolling pin,cutting around the circumference of the cylinder with a butter knife.
