Whole Wheat Pasta Dough Recipe

How to Make Pasta by hand with the Dome kitchen tool

Ingredients
  

  • 1 large whole egg
  • 1/8 cup water 1.2 oz
  • ½ cup whole wheat flour 2.5 oz
  • ¾ cup all purpose flour 3.2 oz

Method
 

  1. Add the egg and water to a mixing bowl. Stir well.
  2. Add the whole wheat flour and white flour to the bowl. They don’t have to be premixed.
  3. Stir with the dome until the mixture is thoroughly moistened.
  4. When it becomes more dough-like, knead the dough with the dome until you can form it into a ball.
  5. Rest the dough for 10 minutes
  6. If you have a pasta rolling machine, cut the dough into 6 pieces and process it through the machine.
  7. Allow the cut pasta to dry on a rack or arrange it loosely in small separate piles.
  8. To roll out with a rolling pin, cut the dough into 3 pieces.
  9. Roll the dough with a rolling pin on a hard surface as thin as you can. Cut it into strips.
  10. If your work surface can’t be cut against with a knife. Allow the dough to wrap around your rolling pin and cut strips directly on the rolling pin,cutting around the circumference of the cylinder with a butter knife.
